1. braise the pork chops and garlic in some stock or wine until very tender...

...adding some of the veggies as they cook. Reduce the liquid to a gravy (or flour the chops before browning) and serve over rice.

If you don't have any good liquid to braise the chops in, go out to dinner.

Wait a minute, you said you were drinking martinis the other night-- so you have VERMOUTH? My work here is done, tonto.

2. mike_c's idea for the chops, steamed broccoli and mashed taters on the side.
The leftover liquid from cooking the chops could be reduced or thickened and served too.
You could put a little bit of pesto in the potatoes, but only a little. Pesto and pork is something I've tried and I don't recommend it.

3. BBQ the pork chops and cut them into cubes. Fry up the rice with garlic once it is cooked

and add chopped fried egg bits (Yoke scrambled), steamed broccoli and some onion if you have it. Add the BBQ pork and eat it out of a bowl..using chopsticks. Add lots of Salt & peppa & soy sauce if you want.
