I doubt if I could deal with that either!

There's a little hole-in-the-wall Vietnamese place near the hall where I'm playing on Saturday. They bring a plate piled high with fresh basil, parsley, cilantro, sprouts, and hot peppers. Of course, the table has fish sauce, hot sauce, and some other sauce that I'm as yet unfamiliar with. You can have a variety of meats in your soup, or just order it plain. I prefer the chicken, myself. Green tea comes with the meal. Their "regular" sized bowl is about a quart, and costs from $4.99-6.99 depending on the meat you add.

I love this place!

73. It's good in the soup if you like Hoisin. My son and I always add
Hoisin and Chile Sauce. My husband adds the mint and lime. He wouldn't be caught dead using Hoisin and Chile's and I can't stand the mint and lime.

The beauty of Pho is that no two bowls will ever be the same - it all depends on thelikes of the person eating the soup.

We live about 5 minutes from Little Saigon and the best Pho House in our city. I am sooooo hungry for it now! :9

I could live on Pho.

Damn, between Mulligatawny and Pho..... Well, for SOUP, it's Mulligatawny. For Meal in a Bowl heaven, it's Pho.

44. How about chicken stock?
Ingredients:
4 thinly sliced onions
3 T butter
2 T flour
Salt and pepper to taste
1 clove garlic, minced
1 t sugar
1/4 t ea of thyme and parsley
1 qt chicken stock or consomme
1/2 c dry wine
1 T cognac
French bread
Freshly grated cheese of choice


Instructions:
Saute 4 thinly sliced onions in 3 T butter until onions are limp. Add flour, salt, freshly grd pepper, garlic and sugar. Cook over med heat until mixture is golden brown. Add parsley, thyme, chicken stock and wine. Add 1 T cognac. Toast slices French bread, butter and place in ovenproof onion soup crocks, sprinkle generously with freshly grated cheese. Pour into soup crocks, add more grated cheese, place under broiler until cheese is melted and soup bubbles.

68. I think you could probably substitute veggie stock
for the beef in just about any of the recipes...but here is another I found:

French Onion Soup

Portions: 6

Ingredients:
6 yellow onions
2 tbsp olive oil
½ cup brandy
4-6 cups vegetable stock
salt, to taste (about 1 tsp)
crusty sourdough or french bread, cut into slices
grated Swiss Gruyere cheese

Instructions:
1. Peel onions, slice in half, then cut into half-circles.

2. Heat olive oil in a large soup pot on medium heat. Add onions and stir to coat them with the oil. Stir once every 2-3 minutes, gradually reducing the heat to low as the onions cook. If they start to stick and burn at any time, add a tablespoon or two of water.

3. After about 30 minutes the onions will be golden brown and very soft. Add brandy and stir for about 10 seconds to de-glaze the pan.

4. Add just enough stock to make the soup as thin as you like, then stir and cover.

5. Let simmer on lowest heat for 15 minutes, then add salt to taste.

6. Toast one bread slice per person. Ladle soup into bowls, place a slice of bread on top and sprinkle with grated cheese. Serve immediately.

That or soup my grandfather used to make. I don't know what it's called. We called it New Year's soup, cuz that's the only time he made it.

It's like potatoes, italian sausage, escarole and probably some other stuff in broth. I haven't had it since he died, and I guess I'll never have it again.
