I had some leftover roast pork loin that I had covered in my secret spicing coating (salt, pepper, thyme, oregano, cinnamon, garlic powder, onion powder, maybe some other stuff - it's secret, because I mixed it last year and didn't write down what I put in it or in what proportion, which is sad, because it's tasty) and then baked in a pan of mirepoix. I took a few slices of that and julienned them.
I had some onions and fennel that I had braised with garlic in wine the other night - a tasty Provencal dish that I have fallen in love with, so I diced up the last half fennel and smashed two garlic cloves.
A few chopped up portabella mushrooms.
Some diced onion that I diced a couple days ago.
I sauteed the above in some butter, and when hot I cooked up the eggs in a separate pan (using clarified butter) and poured the above on top of the eggs, spinkled with a generous helping of grated parmesan cheese, folded it up (it was a lot of topping, so it was really just a flopping over of one side on the other) and served it with some kind of hot sauce - I think it was a Thai brand, but I can't remember; it was from a month ago, and I didn't open it at home so it didn't get labeled before going in the fridge.

(as I posted in a thread last night, I'm trying to eat my fridge empty just to get everything older out and give it a clean and start afresh, for spring).
