So now I post the recipe for the seafood chowder I made tonight.

So now I post the recipe for the seafood chowder I made tonight.
As I've posted before, I'm trying to get rid of everything in the fridge so as to begin over with a fresh clean one, no old food...

I had a few onions, and the sauce, left over from when I made wine braised onions and fennel the other night.

I had a half a red onion, and two bunches of old scallions - white parts still good.

And about a pound of old mushrooms.

So, I chopped all that up and sauteed it in some olive oil and butter.

Then added some chopped celery and carrots (almost got rid of all the carrots, but there were just a few too many to work properly in the soup).

Let that cook for ten-fifteen minutes, then dump in a bowl of crumbled Ritz Crackers and stir and cook another minute or two. Then I dumped in the onions from the braised onions (I had chopped them) and all the liquid that was left. Dump in about a half cup of the cooked and chopped bacon I keep for salads... then some chicken broth.

I did buy a piece of salmon today, so after determining that the fishmonger did a TOTALLY SHITASS JOB of "scaling" it, I cut all the skin off and then cubed it up and put it in the soup. I had realy hoped I could keep the skin on, but there were so many fucking scales left on it I couldn't.

Then two packets of Star Kist whole clams (which are really good; and also because my fishmonger, the bastard, had NO CLAMS today :grr:).

Let that simmer and cook for a while, dump in a pint of Half & Half, stir it up, and eat it!

I sauteed a few scallops in clarified butter, and sprinkled some lemon zest and a bit of lemon juice on them as they finished cooking and served them on the side.

Very much yummy!

I only wish I still had access to good New England chowder biscuits.

saute scallops, try sprinkling some cocoa powder on them.
