I never had a parsnip in my life until Sara Moulton mentioned it (parsnips in mashed pototoes) on her show one time.

Then Batali did a while later.

MMMMMMM!

I am going to get a ricer so I can totally mash up the parsnips. The spuds are ok with a lil' chunkyness.
I just want the flavor of the 'snips myself. (presently I use a food processor, (mixed results.))

I was one of those people who had the 2111-lid top from Peter Pan and had, erm, stomach discomfort the night after I ate a PBJ sandwich. It's going to be years before I can eat that stuff again...and I LOVE PBJs!

Crofter's Organic - found at Whole Paycheck. It's tangy and quite good. I tried it on a lark.

Oh, I bought the Whole Paycheck creamy peanut butter. I like a list of ingredients that reads: peanuts, salt. :D

My neighbor has several huge fig trees in her yard...told me I could raid them any time I want (also let me raid her yard for pecans last fall).

So, in about July, expect me to be whining about fig-tree rash.

But I do make some awesome fig preserves, so it's worth the rash. :)

In 1995 or 1996, Justin Wilson moved into a lakefront home about a mile from me. I called him up and told him that I'd like him to try my fig preserves. So he said, "Well come on over." I brought a big jar of fig preserves, and he made a cast-iron skillet full of biscuits. I visited him several times before his death...

He thought that they were delicious. :D

Nothing too spectacular...a chicken thigh sprinkled with Cajun and Montreal Steak Spice, rosemary, curry and crushed chili peppers, a baby spring greens salad and a chickpea salad with a hempseed oil/ apple cider vinegar dressing. Lots of hot banana peppers on the side to help with this dang cold I woke up with.

Some gluten free ginger cookies for dessert. :9

we try to eat a little healthier all the way around. A friend gave us panckae mix from this company and it's awesome:

Don't feel like there is an undigested lump in the belly after eating them and they are so fluffy! The directions say to mix with water but I use soy milk and also add a little vanilla.

Although it's not listed on the website, we were able to find it at Wild Oats so I wouldn't trust the website for that info. I just called up our local health food stores and they both had it.

I want to try their bread mix next.

that was fantastic.

Unfortunately, I can't find it since my last move. It was just a treat - once every week or two. They were GF buckwheat pancakes.

I use this: http://www.bobsredmill.com/catalog/index.php?action=showdetails&product_ID=405 as a base, and then add some extra flour, whether it be more chickpea flour, or my favourite, buckwheat; I add a bit more baking powder, and I'm ready to go. They're very good.

I checked out your link, and unfortunately I can't use it - sorghum flour, while being GF, doesn't agree with me. I'm familiar with Pamela's products; here in my city we have a ton of GF products available, including our own bakery, Kinnikinnick.

SHRIMP DE JONGHE

Active time: 1 hr Start to finish: 1 1/2 hr

Created at de Jonghe's restaurant in Chicago, this dish is a memorial to a time when we were afraid of garlic but not of butter. The amount of garlic in it was considered outrageously racy.



2 lb large shrimp (about 48), shelled and deveined
1 large garlic clove
1 1/2 teaspoons salt
1 tablespoon finely chopped fresh tarragon
1 tablespoon finely chopped fresh parsley
1 tablespoon finely chopped fresh chervil
Pinch of dried thyme, crumbled
1 shallot, minced
1 tablespoon minced onion
2 sticks (1 cup) unsalted butter, softened
1 1/2 cups fine dry bread crumbs
Pinch of freshly grated nutmeg
Pinch of mace
1/2 teaspoon black pepper


Cook shrimp in a 4-quart pot of boiling salted water * until just cooked through, about 1 1/2 minutes. Drain shrimp in a colander, then immediately transfer to a large bowl of ice water to stop cooking.

Preheat oven to 350°F.

Mash garlic to a paste with 1/4 teaspoon salt using a mortar and pestle (or mince and mash garlic with salt using a large knife), then stir together with fresh and dried herbs, shallot, onion, 1 1/2 sticks (3/4 cup) butter, 1 cup bread crumbs, nutmeg, mace, 3/4 teaspoon salt, and 1/4 teaspoon pepper.

Melt remaining 1/2 stick butter and stir together with remaining 1/2 cup bread crumbs, 1/2 teaspoon salt, and 1/4 teaspoon pepper to make topping.

Arrange shrimp in 1 layer (slightly overlapping if necessary) in a buttered 3-quart flameproof gratin dish or other wide shallow ceramic baking dish. Cover with herbed breadcrumb mixture, then sprinkle with topping. Bake in upper third of oven until golden, about 15 minutes. Turn on broiler and broil until crumbs are golden brown, about 2 minutes.

* When salting water for cooking, use 1 tablespoon for every 4 quarts water.

Makes 8 servings.

Got a piece of sirloin today, marinated it and a quartered red onion in a black peppercorn sauce. Going to cook off the steak and onion in a grill pan, slice the steak very thin, and arrange those over some baby greens and dress with Paul Newman's 3-cheese balsamic vinaigrette. Sliced avocado and bleu cheese crumbles on top, and some hot sourdough dinner rolls on the side. Can't wait.

The teenagers in the house are having a spring break waffle party tonight. Just the sight of all their sweeeeeet toppings is turning my stomach a bit. Red hots, gummi things, cool whip, chocolate syrup, cherry topping, chocolate chips, marshmallows, etc. etc. etc. Plus soda! :puke:

A friend of my family called me night before last, and asked me to make a pot of chicken and dumplins for her, because her daughter and family is coming home this weekend to celebrate Easter.

I'm supposed to deliver them tomorrow morning. So I have a pot of chicken and dumplings simmering on the stove, and I'm not even going to get to eat any. :(

93. No, they aren't. My brother is boiling crawfish...
commercially, and he's selling about 20 bags (40 lbs. each) cooked per day, even on weekdays. And selling upwards of 100 bags/day live on weekends.

This is the first year he's done that. I've eaten crawfish until I'm about sick of them. Not quite sick, mind ya, but leaning that way. :D

I love cheese tortellini in alfredo....sooo good. I wonder if you could prepare that with small shrimp in the sauce. Hmmm...might try that this weekend.

That's one thing I love about the South, the wide variety of cuisine down there. I'd think the shrimp would be perfect with the tortellini and alfredo. Sounds yummy to me. :)

They are VERY much in season right now...I'm talking about the real stuff, not the pond raised stuff. They are soooo tasty. If you ever make it down south, here's a pointer for when you order them. You have to order at least FIVE pounds for yourself and no less, or people will look at you funny. :D

I didn't know when the best time of year was for catching them. Five pounds huh? I'm sure I could eat at least that much. Even the pics of them served up look tempting. Not ever having seen them cooked I'm assuming you boil 'em kinda like a lobster.

104. You get a big ol' pot and a propane burner...
You boil a sack at a time with Louisiana brand seasoning, whole onions, lemon halves, whole heads of garlic, and potatoes and corn. (Some people boil sausage links with it.)

Bring em to a boil and let em roll for about 15 minutes, then shut off the burner and let them soak for 20 or 30 minutes. Dang they're good!!

Yeah, I love boiled peanuts. End of summer is when we have peanut boils. MMMMmmmMMMMMmmmm.

That sounds sooooooo good. And I do have a pot big enough for a good old crawfish boil too, with the propane burner to boot. Same contraption I fry turkeys in, with the peanut oil. I'll have to check the store here for specials on the crawfish. I know it's not the fresh stuff, although we do get fish vendors up here from the gulf during the summer.

108. More instructions on boiling crawfish.
If you're going to buy cooked crawfish, ask to see a scoop-full. Look through them. Are the tails curled under? They should be, or that means that they were dead when they were boiled. (One or two dead ones in five lbs is to be expected. Ten or more and I'd look for a new place to buy them.) Ask to taste them, too. People who sell boiled crawfish won't mind at all if you want to sample before you buy.

If you're going to buy live ones and boil them yourselves, plan on 5-8 lbs. per person. Ask if you can see an open sack before you buy, to make sure that you're getting LIVE crawfish. You do NOT want dead crawfish. When you get home, put the little buggers in an ice chest (no ice), and put a waterhose deep down under them. Turn on the water and let it run for 15 minutes or so. It will float the trash and the dead crawfish out (you'll have some dead ones, but you shouldn't have many). Take the hose out, close the lid, and dump out as much water as you can. Bury the hose under the crawfish again, while they're in the ice chest, and turn on the water again. Let it run for a few more minutes until you're certain that the trash is out.

That's called purging. You don't have to use salt water to purge your crawfish--fresh water works best.

Next step--get your big pot up to a rolling boil with everything in it I mentioned in the post above. Be careful when you do the next step, because what's going on in the pot now--with the spices and all--is akin to liquid lava.

Have a buddy help you lift the ice chest and scoot the little guys from the ice chest into the pot. Proceed from there as I told you in the post above.

Oh yeah, and when you're dealing with live crawfish, please be aware that they will PINCH THE FUCK OUT OF YOU. So wear gloves or just be very careful. :D

I don't know how my wife does it, but she has a secret recipe she likes to use on chicken thighs where they get boiled in a sauce she concocts like a mad scientist. I'd love to share the recipe but she has sworn to take that one to the grave. She just calls it juicy chicken.

although, I make mine kinda weird.. I brown the chicken, then add Patak's Curry paste, then alfredo sauce.. toss in a can each of black olives, garbanzo beans and mushrooms.. let simmer over low heat until your rice is done...

113. I had a meal fit for a poor university student. What a co-incidence.
Some garlic & herb sausages, some instant noodles, and some peas, beans, corn and carrot, with a glass of 1/2 diluted orange juice and a two dessertspoons of spaghetti sauce on the noodles.

This is what I can afford!

(Anyone wondering about the dilution of the orange juice? I drink at least a litre of fluid each meal, so a litre of orange juice every day would be expensive!)
