Simple Egyptian recipes?

Hi, everyone.

During our final exam period in one of my classes (Cultural Crossroads: Cairo), we're basically having a huge brunch in which we divide into groups and each make an Egyptian dish to share with the class. Does anyone know any cheap, relatively simple Egyptian dishes that three college girls can make? We live in a small town, so the ingredients can't be too exotic (ie, something you can buy at a Super Wal-Mart...:eyes:).

ETA: I was thinking about koshari/kushari, which is kind of an Egyptian chili and looks simple enough:

1. Try a tagine
Not strictly Egyptian, but North African and relatively easy.

Check out egullet.org in the recipe section.

2. One of my coworkers who is Egyptian
loves to bring us all to middle eastern restaurants and talks a lot about all the family feasts when he goes back to Egypt. He's always talking about the basics: Hummous, Tahini, Falafal. He also eats a lot of pita sandwiches with shaved beef and some kind of yogurt sauce.
:shrug:

I'm sure a google search would turn up some cool stuff.

I've been doing the Google thing, but the results seem a bit disorganized and seem to be focused on main dishes (lamb, chicken, etc.) instead of appetizer/brunch-y items. The staples are always a possibility, though. Thanks! :)

Especially the last one. A lot of the sites I went to were very sparse (3-4 recipes per page). I'll have to check them out...thanks again!

7. Just had another thought - Dukka
A ground spice mix with nuts -

A bowl of the dry spice mixture, a bowl of olive oil and cubes of bread. Dip the bread in the olive oil, then in the spice mix. Eat.

Nuts:
1/2 cup Roasted Pistachio
1/2 cup Roasted hazelnut
(Almonds can be substituted for the hazelnuts or pistachios)

Spices:
1/4 cup Roasted white sesame
6 tablespoons Coriander
3 tablespoons Cumin
1 teaspoon Pepper
1 teaspoon salt
1 teaspoon dried Thyme
pinch cayenne pepper
Method
Grind nuts coarsely in food processor
Grind Spices in spice grinder & Mix together

Serve with bread and good olive oil, dipping the bread firstly into the oil than into the spice mixture
