Whats for Monday supper?
I do meatless Mondays...

Sauteed red and white onions with that fake Morningstar strip meat.

Full crimini mushrooms cooked in butter and garlic (I got a wild hair and also added horseradish)

Biscuits with paprika sprinkled on them

Dats it.. crap, no starch! next time :P

41. The hot dogs are amazing.
They actually taste like hot dogs, and even have the right texture. We boil 'em, but I'll bet they're great broiled, too.

Sounds yummy. Good on ya for going meatless. :thumbsup:

I made spaghetti and sauce (jar sauce but I spruced it up a bit). Just plain old bread and butter (well margarine really). I usually make garlic bread but I was feeling lazy.

DARN IT...I shoulda cut some lettuce and spinach from the garden for salad. :banghead:

Thanks about the meatless, but don't go nuts. Its only on Mondays hehe.

I had a long day, so I wanted something that would be easy and good with a beer. :)

edit: The taquitos are Starlite brand, the (soy) chorizo and black bean style. I like 'em pretty well.

22. They're vegan.
Well these ones are anyhow. Taquito= a tortilla wrapped up around some filling (normally meat, obviously not in my case) and then fried. They're a bar food kinda thing.

If you don't, there are tons and tons of vegan recipes here: www.vegweb.com

There's also a recipe thread in the vegetarian/vegan/animal rights DU group that's got both ovo-lacto and vegan recipes.

If you need a recipe for something specific or need help converting a recipe let me know and I'd be more than happy to help.

maybe Ranch Beans (I love those things and haven't had em in a while) and some steamed fresh zucchini I just remembered was in the fridge. I didn't get a chance to do my shopping today, so it'll be whatever I find in the fridge.

Those 'srooms sound good too, I think I'll saute up some too :bounce:

25. I pan fried some hot Italian sausage and set it aside....

in the same pan, I added a little olive oil and some vegetables (green onion, sweet onion, zucchini, orange pepper, garlic, tomato) and sauteed them until tender, seasoning with salt and pepper. I cut the sausage into bite sized pieces, added the pieces back to the vegetables, and tossed the whole thing with some al dente fetuccini.

It was delicious.

36. One tip - heat up the boca in the skillet and season it like you would the beef.
If you heat it up in the microwave first, the texture isn't right.

35. homemade tortilla soup
8 cups chicken broth (Better Than Bouillon is ideal)
chunked chicken, cooked (could be from a supermarket broiler)
1 package frozen sweet corn kernels
a cup of green tomatillo salsa
2 T cumin
1/2 small onion, finely diced
juice of 1/2 lime
8 oz chopped canned tomatoes or a cup of chopped fresh tomatoes


Simmer for 20 minutes

Stir in 1/2 cup of cornmeal to thicken slightly, and simmer ten minutes more.

Add in 8 soft corn tortillas, broken into chunks and simmer five minutes more. They will balloon up like little pillowy dumplings.

Serve with tortilla chips for crunch, and a dollop of sour cream and some avocado slices.

Mmmmmmm. I'm going for a second bowl now.
