mmm, homemade bread and 16 bean soup...what's for dinner at your place?

I've made the most of my sick day (had to go to the dr. for a sinus infection :() and put together some yummy soup and a loaf of whole wheat bread :D

So what's for dinner at your place?

1. 16 beans? Surely you mean 16 beans in the soup, not 16 TYPES. I can't think of 16 types of beans!!

3. Nope, it really does have 16 kinds of dried beans in it. It is good too
we make it at our house, too.

blackeye peas
black beans
navy beans
cannolini beans
red beans
pinto beans
speckled butter beans
great northern beans
pink beans
purple hull beans
cream peas

just pulling these out of my memory here. I have it with cornbread

16 Bean Soup:
Either soak or prep the beans according to the package...
In Butter sauté a couple cloves of garlic and one onion. Then add chopped peppers, (one red, one green) celery, and carrots. Sauté all these with a little salt and pepper until they start to get tender. Then add enough stock (I cheat and use water and vegetable bullion) to cover everything by a couple inches. At this point I also added a bay leaf, basil and oregano and a dash of red pepper. Bring everything to a boil, then reduce and add the beans back in. Simmer for 2 hours or so and enjoy.

48. WW 6 point lasagne
1/2 pound extra lean ground beef
1 large onion
2 cloves garlic
2 tsp olive oil
2 medium or 1 large zuchini
1 red bell pepper
2 15 oz jars prepared marinara sauce
1 15 oz container fat free ricotta cheese (I like to beat an egg into this, but it is not required)
1/2 cup low fat mozzerella, shredded
1/4 cup parmesan, or romano cheese, grated

9 lasagne noodles

1 Tablespoon fennel seeds, whole

preheat oven to 350

saute the beerf, onion and garlic in the oil. Cook until meat is no longer pink
use a small skillet with no oil and toast the fennel seeds on high or med high just long enough to get them nice and warm and with good aroma. Crush or grind them and add to the beef mixture

dice the zuchinni and pepper and add to beef
add the marinara sauce. (hint: if you can't find the smaller jars of marinara, use one 24 oz jar and add a can of diced tomatoes to the sauce)

Bring to a boil, reduce heat and simmer until thickened.

boil the noodles, per package and drain, rinse and cool.

Spray a 9 x 13 pan with non stick spray, spread 1/4 of the sauce on bottom, then 3 noodles, then 1/3 of the ricotta cheese. Repeat until all noodles are used and end with the meat sauce. Cover tightly with foil and bake about 30 minutes, then remove the foil and add the mozzerella cheese and parmesan cheese. Bake another 15 minutes.

Makes 8 servings which are about 6 WW points each.

Freezes well.

45. not hard at all
about if you soak the beans overnight, you've got about 20 minutes (if that) of prep... then they just sit in the oven and bake

5. I made roast beef
mashed potatoes, and corn bread for dinner last night. So tonight, it's roast beef sandwiches, since it'll probably be another 6 months before I cook anything else. ;)

46. My recipe is sauteed shrimp with a ton of spices...
to make it hot. We use chipotle, though use whatever ya' like.

...and Trader Joe's Kung Pao noodles and Trader Joe's Envy Greens. I love those frozen greens. Edamame beans, spinach, asparagus and broccoli. They are delicious and I always feel righteous with half a plate of greens on the plate. Yes, it was Trader Joe's day today.

I absolutely love North Carolina Barbecued Pork, make no mistake.. lovelovelove it! It beats all the other BBQ's in the world, no question, But someone just gave us like a GALLON of it, so we're having BBQ sandwiches for the rest of the week. I never thought I could get enough of it but really this is too much.

And I'm trying to go vegetarian and all of a sudden everyone's giving us food x(

The chowder came out pretty dern good, and there's tons left over--cod, salmon, clam, taters, carrots, all in a nice creamy soup. :9
