I don't know what to cook tonight
any ideas? It shouldn't take too long to prepare.

3. RACLETTE !
I miss doing the raclette when I lived with my fiance in Germany . OH man I loved Raclette day. That brings back so many memories lol.

I love a good stir-fry... over brown rice or thin egg noodles... lots of veggies, a little bit of chili paste a little kick....

9. Here's a simple meal for you
Roast a whole chicken in the oven. I baste it with a mixture of fresh squeezed lemon, olive oil, garlic powder and oregano. Cook at 350 got 1 1/2 hours--baste about every 20 minutes or so. Rice (Pilafi goes well with it. Steamed green beans and a salad.

12. How about Chicken Marsala?
Pound out a boneless chicken breast half. Dredge in flour and saute in bitter. Add some chopped shallots and cook until wilted. Add about 1/4 cup of Marsala or sweet vermouth and serve when it thickens a bit.

You have leftovers (which you can freeze) or make chicken salad for sandwiches, and you can boil the bones for chicken soup!

What I am making right now...looks long but takes 20 minutes...let simmer and by tonight...yum. This is really good.

Pasta e Fagioli


INGREDIENTS:

1 (10 ounce) meaty ham bone or smoked
pork hocks
2 cans white beans

1 (8 ounce) box elbow macaroni
1 tablespoon olive oil
1 onion, chopped
3 cloves garlic, minced
1 (16 ounce) can diced tomatoes
2 stalks celery, diced
3 carrots, diced

1 teaspoon red pepper flakes, or to taste
salt and pepper to taste
2 tablespoons chopped fresh parsley


1. Put ham bone, and 10 cups of chicken broth into a large saucepan or Dutch oven. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer for about 1 1/2 hours.
2. Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain, rinse with cold water to chill, then set aside.
3. Heat olive oil over medium heat. Stir in onion and garlic, cook until the onion has softened and turned translucent, about 5 minutes. Stir in tomatoes, celery, carrot, red pepper flakes. Bring to a simmer, then reduce heat to medium-low and cook until the carrot has softened, about 10 minutes. While the tomato mixture simmers, remove the ham bone. Separate the meat from the bone; dice the meat and throw EVERYTHING in one big pot, Including the bone...the longer in tere the better the flavor).
4. To finish the soup, stir the beans, and add additional water if needed to make a chunky soup. Season to taste with salt and pepper; simmer until the macaroni and beans are both quite tender, from 5 to 15 minutes.
Garnish with parsley

Serve with crusty Bread and garnish with grated Parm....

26. I know what your thinking
However, whenever my daughter or myself has a ham...I freeze the bone for use later with a soup. Believe me, that is the only reason I do these recipes. Worth it though, this one is a winner. Besides, I love to cook :)
