what's for dinnah DU?
tonight, we're having BSTs; Bacon, Spinach, and Tomato sandwiches. the bread is going to be thick-sliced as we bought stuffing bread (ie: unsliced bread) and toasted.

while we're eating the sammiches i'll hopefully have gumption to fry stuffed jalapenos as a chaser. :9

so what's on the menu?

I'd do it in two steps:

1). A poll in which everyone here gets to select the ingredient for the Iron Chef challenge

2). The challenge itself, in which everyone participating in the thread has to share a recipe with that ingredient.

We should think in terms of meat, meatless, and "global" spices like curry, etc. The broader the range of choices, the more likely people will be to vote in the poll and get behind it.

...no matter how many choices you give people in the ingredient poll, someone's gonna say "How could you not include (blank)," so they just need to know that the largest amount of votes for one single ingredient wins, whether it's on the poll or a write-in.

I hope it will be something a little offbeat...not a "beef" or "chicken" or "tofu" challenge. We shall see, eh?

21. Linguine with Cannellini Bean Puree

2 cloves garlic
2 cups chicken stock
2 cups canned Cannellini Beans
2 tablespoons olive oil
2 teaspoons white wine vinegar
1 teaspoon salt
1/8 teaspoon freshly ground black pepper

In a saucepan, sweat the garlic in chicken stock. Add the beans and cook until heated through.

Transfer the mixture to a food processor or blender and puree with the remaining ingredients. Adjust seasoning, to taste. Simmer until thickened, approximately 20 to 30 minutes. Toss with freshly cooked linguine, top with freshly grated Parmagiano Reggiano cheese and minced parsley.

I also use them in Pasta e Fagioli (Pasta & Beans) and White Bean & Kale Soup.

I roasted the pork all day with rosemary in the crock pot. When it's done, pull it apart and add bbq sauce (I doctor it up with vinegar). Yummy!

Quick and easy thanks to Progresso and Pillsbury. I've been decorating and doing laundry all day and have to cook a magnificent meal for SO's b-day tomorrow; he always requests meatloaf (mine is really good) and the au gratin potatoes I make with Black Diamond cheese. So I'm doing the easy dinner tonight.

When I lived in Massachusetts my family and I used to go to The White Cap in Ipswich. I'd often get flounder and onion rings. The restaurant is family-owned, and they also own a boat. I don't know what percentage of their fish they catch themselves, but it is unbelievably fresh. The shrimp was killer too...it was sweet. In California, "prawns" are nothing like the shrimp I got in Massachusetts.

They also adhere to the "fresh oil plus correct temperature equals non-greasy fried food" rule.

There used to be a Dairy Queen right down the street. We'd eat at The White Cap and then drive to DQ for dessert.

64. Do you actually make your risotto the "official" way...
...adding a little liquid at a time, stirring constantly, adding a little more once it's absorbed? I've never found myself with the patience to make it that way. I like it...I just like it better when someone else has prepared it.

75. Broiled chicken breasts marinated in balsamic vinegrette ...
and topped with sliced tomatoes and feta cheese, the toppings added the last 2 minutes of broiling.

Having that all week with some veggies TBA.

76. I made a batch of my soon-to-be-famous chicken strips!
They're made with hand-cut boneless breasts. I let them swim for a while in a bowl of buttermilk, beaten eggs, garlic, pepper, paprika, and Old Bay... then they get double-coated in House Autry "chicken breader", and fried nice and golden.

I made a ton of them, because if i don't we never have leftovers, and served them up with a savory rice and beefy mushroom sauce, and some green beans cooked with butter and bacon.

Yeah... gonna die from clogged arteries before i'm 45... and it won't be a pretty corpse, either.
But it'll be smiling, and probably licking it's fingers.
