I finally found a way to make Butter Beans edible.
We have like, 8 cans of Butter beans in the pantry. No idea where they came from. I think I purchased two cans a year ago and they bred in the cabinet. I don't know why I would have purchased them in the first place, as no one in my family really cares for them. I can eat them, but they aren't my favorite. All they are is a lima on steroids (sorry KitchenWitch) overgrown, overripe, dry and starchy. Bleah.

I found a recipe for ButterBean Burgers that had great reviews, and thought I'd give it a try and they were fricking AWESOME. Even the meat eaters in the family scaarfed them up last night. I ate the one piddly leftover patty for lunch today, and it was even tastier than last night, and I'm craving some more. WOW. Who would have thought I would become a fan of the humble butter bean?

2-10 oz. cans Butter Beans, drained and mashed (I cheated and threw it in the food processor)
1 small onion finely diced
2 small jalapeños seeded and finely diced (I didn't have any fresh jalapeño on hand so I used green pepper and added hot sauce, and some hot chili powder)
20 finely crushed saltine crackers
2 cloves garlic minced
1 cup shredded cheddar cheese (I used extra sharp)
2 eggs
flour for dredging.

mix all the ingredients (except flour), form into 8 patties (it helps if you wet your hands) and dredge in flour. Let patties set for about 10 minutes in the fridge and gently pan fry (turning once and only once) until golden brown and crispy on the outside. I fried mine on a griddle and used non-stick spray, but I had to spray the top of the patty before I flipped it over...I think the starch in the beans absorbed a lot of it...so I was glad I didn't pan fry it in oil..or I think it would have added an awful lot of calories. ( Even though it's hardly lo-cal with all that cheese)
