The G stands for gravity. The proper term is G-*suit*, but most of the apparatus is in the part covering the legs. (I'm trying to leave myself open to as few jokes as possible here)

It's the part of a flight suit that decreases the effect of G-forces on a pilot's blood flow. It's an absolute necessity for combat missions or anything else involving tricky maneuvers, but not for a 30-mile hop on a calm day.
