The best Oatmeal Chocolate Chip cookie in the world
Ingredients:

1 cup (2 sticks) butter
1 cup brown sugar
1 cup white sugar
2 eggs
1 tsp vanilla
1.5 cups white flour
1 tsp baking soda
1/2 tsp salt
3 cups oatmeal
1.5 - 2 cups chocolate chips

Set oven to 350 degrees.
Mix sugars and butter together. (soften the butter first)
Add eggs and vanilla, mix.
Mix in flour, salt and baking soda.
Mix in the oatmeal.
Stir in the chocolate chips.
The finished dough won't look like your regular cookie dough because it has less flour in it.
Drop by tablespoon full onto un-greased cookie sheet.
Bake for 10 - 13 minutes.

Here's where I lose most people. You need to take these cookies out before they look totally done! Judging when is a skill, but take them out when you think they could use another 2 - 3 minutes.




The first batch is fixing to come out of the oven and they are divine!

So - why do they come out early? To preserve chewiness? Or b/c there's so little flour?

2. Yes, so they stay chewy
It's so easy to go from yum, to overdone with these. Plus, they tend to continue cooking for a couple of minutes when you take them out.

I could easily make myself sick with these, I have to force myself to stop! :D

3. You are correct!
That's the exact same recipe that I use :)
Sometimes I add 1 and 1/2 cup of coconut to the recipe.

7. The batch I made this morning
had 54 cookies. And they're good size cookies too. Plenty for everyone! ;)
