The Atkins & South Beach diets are very difficult to do if you have a sweet tooth. This is a very easy to make and very satisfying dessert for when you need something "sweet."

Prodn2000's Fruity Mousse

Ingredients:

1 pint heavy whipping cream (In your grocer's dairy section)
1 small box sugar-free Jello (Black Cherry, Cherry, or Raspberry work best, IMHO)
1 pint raspberries, blueberries, or strawberries.

Directions:

Mix the whipping cream in a chilled mixing bowl for 2 minutes on medium. This will thicken the cream slightly. Add-in the Jello mix and beat on high until stiff peaks form. Voila, you are done.
Fill a classy small glass or, my favorite, a wine glass with the finished product. Add 6-7 washed blueberries or raspberries or 2 strawberries cut into sections.

Net Carbs:

1-1.5

Although Dr. Bernstein, the diabetes doctor, says that sugar-free Jell-O isn't really sugar free if any ingredients end in the letters "ose" -- but I think I could handle the likely small amount.
