I did leave out the peppercorns and demi-glace, because most folks can't find brined peppercorns in a market, and don't know how to make demi-glace. But the recipe's fine without them.

as long as politics aren't involved, the man is actually quite useful, unless you're one of those inveterate Yankee-haters, in which case you are dead to him twice over. The RS version of chicken marsala was my parting meal my last visit in March. Could a left-right marsala cookoff be in the offing?
