1. Alton Brown Pressure Cooker Chili
I didn't have a pressure cooker so I put it in the oven for a couple of hours. This was delicious.

3. I use that one, too.
I use beef only though. The time in the oven really lets the connective tissue in the meat soften up.

Alternatively, I suppose you could use a crock pot or other slow cooker instead of the oven.

2. well we make ours with:
a pound of hot Italian sausage
pound of burger.
diced chili tomatoes
a big diced onion
and the picante V8.
plus some green pepper if you have one.

really spicy.

5. Wick Fowler's 2 Alarm Chili mix.
Wick won the very first ever Terlingua Texas Chili Cookoff, The Great Chili Confrontation.

His packet of spices & stuff with your choice of meat can't be beat.
(Did I say that?)

6. Wick Fowler's seasoning pack led me to my own version using
spices from the spice shelf. My personal touch is using fresh jalapeno, serrano and poblano chiles in the mix and cooking down the meat with the spices, then adding water and cooking it down again before adding the tomatoes, fresh chiles etc. Add beans toward the end and finish off with some fresh cilantro. I also use a lot of fresh garlic.

I prefer black beans but to each his/her own.

8. not a native Texan. I am from Kentucky, where it is OK to put beans in the chili
it makes it go farther and lowers the WW points per serving too.

10. Try This One!
Ingredients
2 teaspoons oil
2 onions, chopped
3 cloves garlic, minced
1 lb lean ground beef
3/4 lb beef sirloin, cubed
1 (14 1/2 ounce) can diced tomatoes
1 can dark beer
1 cup strong coffee
2 (6 ounce) cans tomato paste
1 can beef broth
1/2 cup brown sugar
3 1/2 tablespoons chili sauce
1 tablespoon cumin
1 tablespoon cocoa
1 teaspoon oregano
1 teaspoon cayenne
1 teaspoon coriander
1 teaspoon salt
4 (15 ounce) cans kidney beans
4 chili peppers, chopped

Directions
1-Heat oil.
2-Cook onions, garlic and meat until brown.
3-Add tomatoes, beer, coffee, tomato paste and beef broth.
4-Add spices Stir in 2 cans of kidney beans and peppers.
5-Reduce heat and simmer for 1 1/2 hours.
6-Add 2 remaining cans of kidney beans and simmer for another 30 minutes.

11. here's mine
2 lb ground beef
chopped large onion
1/2 cup chopped bell pepper
drained can kidney beans
drained & rinsed can black beans
drained can butter beans
drained can black-eye peas
2 T ground cumin
1/3 cup worcestershire sauce
1 T chili powder
2 cans chopped tomatoes
1 or 2 cups water
1 T Better Than Bouillon beef flavor (beef stock in a little jar)
a handful of masa or cornmeal to thicken

Brown the meat, pour off any fat.

Add everything except the cornmeal, bring to a boil, and reduce the heat to simmer for a couple of hours. Then stir in a good handful of cornmeal and adjust the seasonings to your heat index (add hot sauce if desired) and simmer for another half hour.

14. Here's mine
pound of ground beef (browned and drained)
4 cans kidney beans
1 large can of whole tomatoes
1 small can tomato paste
4 garlic gloves minced
1 chopped green pepper
1 chopped white onion
3 jalapenos
3 bay leaves
1 bottle of semi dark beer (I use Shiner Bock)
Cumin, chili powder and black pepper to taste
Do NOT drain the beans or tomatoes

Throw everything together and let simmer for 2-3 hours, serve with sour cream
