Mmmm.... butter poached tilapia with sauteed mushrooms, lime brussel sprouts, and a salad
Damned good dinner.

Yummy!!

I had an opened bottle of Bordeaux, so I poured that, but wisely waited until the meal was almost done (I just couldn't wait any more) before drinking any.

Bordeaux seriously does not go with butter poached fish and lime brussels sprouts.

It's tasting mighty fine now, though.

Now, a bordeaux blanc with the tilapia would've been mighty tasty....

3. Take brussels sprouts and chop them up into small bits, sprinkle with salt and pepper,
then saute in butter (or, better yet, duck fat) for a minute or two, toss in a bit of water, then squeeze some lime on 'em and immediately cover and let steam for a minute.

Quick, easy, and REALLY REALLY good, without any of that awful boiled brussels sprouts taste or smell.

Very light, very wonderful.

I love it as an accompaniment to duck breast, but it really goes with anything, from as light as butter poached fish to as heavy as a standing rib roast.

4. I'll have to try that.
I usually do a similar preparation using pancetta and shallots. But the idea of duck fat? :drool:

I'm assuming the technique for the tilapia is just about the same as for oil poached shrimp which I've done before and are wonderful.
