I can't find a decent butter bean recipe on the web
all of them call for either frozen or canned beans.

I want to use uncooked beans.

Can anyone help a sister out?

3. Easy!
Take enough bacon or ham to season the bean, brown it and some minced onion together. Add the beans, cover with water and simmer on low. That's how they do them here in IL...:)

5. Y'all beat me to it!
Just boil 'em with with anything that will add the flavors you are looking for. But, add salt only at the end, or the beans will toughen on ya.

My mom boils 'em up with a hamhock. :9

6. boil the hell out of them
don't "simmer", just boil them full blast. Put a little salt in near the end, and some other spices if you like. That's the secret of good butter beans.

7. Catwoman, You Can Also Search Recipes For "Edamame"
Edited on Tue Mar-02-04 06:49 PM by cryingshame
Japanese Version of butterbeans. :)

I personally just steam them in their shell, sprinkle on lots of kosher salt, and then peel them and eat... licking the salt off my fingers

Yum!

11. You Shell The Green Soy Beans
And you've got Butter Bean substitutes... or Lima Beans...

I ate Macrobiotic for a while... recipes based on Japanese cooking. :)

12. Ah, there's the key word:
"Substitutes."

Actually, I love edamame and butterbeans, but I never thought of them as good subs for each other (then again, I eat my edamame steamed -- or boiled -- and salted; and I eat my butterbeans with some piece of a pig in the pot).

9. Here is a recipe & a link
Pasta with Edamame and Kale

Often thought of only as a garnish, nutrient-rich kale pairs up with edamame in this flavorful pasta
dish. Adapted from Mauny’s Kitchen Table Recipes: www.maunyskitchen.com.

2 tablespoons sunflower seeds
1 tablespoon olive oil
1 large yellow onion, thinly sliced
3 cloves garlic, minced
1-1/2 large bunches kale (12 ounces), stems
removed and coarsely chopped
1 cup vegetable broth
2 cups cooked and shelled edamame
salt and hot red pepper flakes

1 pound pasta
6 tablespoons grated Pecorino Romano cheese
Black pepper
In a 350-degree oven, toast sunflower seeds on
cookie sheet 10 minutes or until lightly browned
(watch closely). Set aside.

Heat oil in large skillet over medium-high heat.
Add onion and cook, stirring frequently, about 5
minutes. Stir in garlic and kale; continue cooking
until kale wilts, about 2 minutes. Stir in broth,
edamame, and salt and red pepper flakes to
taste. Simmer, covered, until kale is tender,
about 3 minutes.

Meanwhile, cook pasta in large pot of boiling
water. Cook al dente according to package
directions. Drain well. Toss pasta with edamame
mixture. Sprinkle with cheese, pine nuts and
black pepper. Serves 4.

10. Ahhhh butterbeans :)
Edited on Tue Mar-02-04 06:54 PM by deseo
Haven't had them in a while, but my mom always cooked them about like any other beans.

Soak for a few hours, or if ur in a hurry, bring to a boil and then soak an hour or so.

Drain off soak water.

Add water to cover with an inch or two more.

Add some salt pork, ham hocks or something :)

Simmer until they are done. I think they take a while, like 2-3 hours but best to keep an eye on them. U know when they are done!

On edit - don't forget the cornbread!!!!!!!
