6. No. I have a pot and an electric burner. This isn't the fucking kitchen to the Ritz.
I suppose I could go start a fire outside, but the police would probably object. I'm willing to use the pot as a frying pan if necessary.

7. Only way I've seen em cooked was...
Boiled a bit with leeks and other veggies, removed from most of the juice then baked for hours. The smoker was just an idea.

I bet just leaving it in the juice and cooking for 4-5 hours would make some good shit. By cook I mean right on the edge of boiling and not.

8. Most pork knuckle recipies I know of invlove roasting.
Pork knuckle is the quintessentiel Oktoberfest food. Goes great with a nice German lager.

12. I recommend cooking them with some dried beans....
simmering slowly for a long time. Add a chopped onion, some salt and pepper and a few hours later, sit down and enjoy.

Myself, I like them best with dried lima beans, cooked as I describe, but any dried bean will do.

* 1 carrot, diced
* 1 onion, peeled and diced
* 1 leek, chopped
* 1 stalk celery, diced
* 2 meaty pork knuckles
* 2 tablespoons vegetable shortening
* 1 teaspoon whole black peppercorns
* salt to taste
* 1/4 cup beer
* 1 pinch ground cumin, or to taste

DIRECTIONS

1. Place the carrot, onion, leek, celery, and pork knuckles into a large stockpot. Throw in the peppercorns, and season with salt to taste. Add enough water to the pot to cover the vegetables. Cover, and cook over medium heat for 2 to 3 hours, or until everything is tender. Remove the knuckles from the water, and drain. Reserve vegetables and cooking liquid.
2. Preheat the oven to 425 degrees F ( 220 degrees C). Melt the shortening in an enamel coated cast iron baking dish or pan. Place the drained pork knuckles, cooked vegetables, and about 2 cups of the cooking liquid into the pan.
3. Bake for 30 minutes in the preheated oven. During the last 10 minutes, sprinkle with beer in which a good amount of salt has been dissolved. Dust lightly with cumin to increase flavor. Serve with potato or white bread dumplings, or sauerkraut salad. In Bavaria, the cooking liquid and juices are strained, and served as an accompanying sauce.

You could skip the oven part and just sautee them? Throw in whatever veggies you have?

Saute an onion or two, a few stalks of celery, a chopped up carrot. Maybe some garlic. Lot of salt and pepper. Anything else interesting in the fridge? Toss it in. Throw in the knuckles. Add a few quarts of water. Boil, then simmer for a few hours with the pot covered. Add a can of tomatoes maybe. Then definitely a can of beans -- I like navy or cannelloni. Taste -- what's missing? Add some spice maybe. It will be delicious!
To make it last longer or a heavier meal, serve over rice!
