Boy, was THAT a tasty snack!
Grilled cheese sandwich: Dill Havarti and Swiss; sliced Italian bread, grilled with olive oil rather than butter; when done, opened and slathered with an authoritative layer of homemade salsa (with the juice drained out), and a spot of mayo and some avocado slices to round it out.

Dang, I'm enjoying having my health improve to the point where I'm actually HUNGRY again, after so long.

Here's one I love:

Sliced avocado
Slices Kraft Cracker Barrel Vermont Cheddar
Sliced red onion
Some chunky bread with whole grain
Mayo
Salt & Pepper

Mrs R makes a samdwich remarkably like yours, and it's really good.

Avocadoes contain NO cholesterol...

Only animal products contain cholesterol...

Avocadoes do contain fat, but it's a healthy fat...

7. Here's some nutritional info on avocadoes

By the way, no plant-based food contains cholesterol, as cholesterol is produced by animals only. However, some plants contain saturated fat (such as coconut oil, for one) which can raise the body's cholesterol levels. Avocados contain monounsaturated fat, similar to olive oil, and basically have no effect on the body's cholesterol levels.

4. Dill Havarti is my favorite grilled cheese choice.
Havarti has such a rich, buttery flavor. Some avocado and perhaps a thin slice of red onion would be a wonderful sandwich.

Lamb shanks here tonight (braised in red wine with plenty of root vegetables)

12. We've gotten into a habit lately of putting green or red salsa on things you wouldn't think
salsa would go with...I'll give you just one recommendation: Chicken soup (ours is homemade) with a spoon of green (tomatillo-based) salsa and a dollop of sour cream.
