I don't even know if there is a butchers shop anywhere within 50 miles of me. I know there are places nearby where you can take your cow to be butchered but I really just wanted a good standing rib roast. I went to three different grocery chains and they didn't have one out for sale. Are they just seasonal in stores?

1. not really seasonal just watch for specials on rib roasts or ribeye steaks
does your store have an actual butcher/meat cutter? If so and the steaks go on sale you can probably get a roast for the same price - have them cut it off the bones and tie it back on for you. Most stores run their specials for a week from Wednesday thru Tuesday. If cost isn't a big problem I would think they could certainly order one for you if they don't ever normally carry them.

On the seasonal thing: in some places fall/early winter is more of a time for butchering meat animals but that is pretty rare now days even for small farmers - they try to have something year round because the demand is such.

2. Ask whoever is behind the meat counter.
If they have a meat cutter available, and aren't one of the grocery stores that bring in pre-packaged meat, they should be able to get you just what you want.

3. Many grocery stores butcher their own meat
If that is the case in your area they can simply cut you a rib roast out of their ribeye stock. It all comes from the same part of the cow. You just have to find one of the employees and ask them to do it.

I do this all the time at my local market. I ask for a center cut section if it is available and I prefer a bone-in roast.

Costco and Sam's also usually have rib roasts available year round.
