15. Easy quick replica for a potato knish--but involves cooking
I live in the PNW where we have no deli and no knishes. An easy way to replicate the flavor is to take some left over mashed potatoes, and mix with some chopped onions browned in butter. Make patties and wrap in a few layers of phyllo dough. Bake until golden brown. These freeze well and are a handy snack or quick lunch to keep in your freezer.

4. Sweet Thai coconut balls--Khanom Krok.
LA being the wonderful food city it is, I can find these at the Hollywood Farmers Market on Sundays. They're probably THE most popular street food in Thailand.



From a blog that describes it:

Kanom Krok is a ubiquitous street food in Thailand. They are made in a cast iron or terra cotta pan with dimples. The mixture of coconut milk, sugar, and salt is poured into each dimple, and the finished Kanom Krok scooped out with a spoon. Kanom Krok is crispy on the outside and oozing soft in the middle. Just delicious. How many times have I said delicious? Oh dear. I. Need. Help.

My second favorite is a (100% illegal but oh-so-good) bacon-wrapped hot dog, if I can find one--usually by scent--in the fashion district downtown.



And the pupusas at the Hollywood Farmers Market are pretty tasty, too.

6. I love my some gyros
but my favourite has to be tacos from LA taco trucks - a few in particular that serve amazing al pastor. Perhaps the best I've ever had didn't even come from a truck - just tow guys with a portable propane skillet (and, some how, a rotating skewer to make al pastor) in Echo Park.

9. Grilled eel in the village of Narita. AKA eel-on-a-stick.
The eel itself was good, marinated in teriyaki and cooked on a long narrow gas grill.
But it was the prep that fascinated me.

Two or three older men with VERY sharp knives sitting around two washtubs.
One tub held live eels.
They'd reach in and grab an eel behind the head.
Place it on a board and filet it with one stroke on each side.
Throw the remains in the other tub.
The 'remains' continued to wriggle for some time.
They didn't know they were dead yet.
whoa

I bet the remains wound up in a soup.
The Japanese don't waste anything.
