Yes, the Florida State Fair.

Chocolate-dipped bacon

If, for some strange reason, the thought of pig meat slathered in fudge doesn't give your stomach a tingle, then get with the times, man. In January, Time wrote about the proliferation of bacony delights on dessert menus in fine restaurants nationwide. Bacon ice cream has even popped up on Top Chef. Mark Boggs of Plant City saw chocolate-dipped bacon at another fair up north and tinkered in the kitchen with some recipes. He decided that freshly grilled Hormel applewood-smoked bacon worked best; for $5, you get four slabs with a cup of syrupy chocolate dipping sauce. Don't let the concept scare you — there is no meaty aftertaste, only a salty-meets-sweet flavor delivered via the peerless crisp-yet-chewy texture of bacon. Find it at Mavric's Chocolate Barn near Gate 2.

But I've made chocolate-covered bacon, and if you like bacon, it's actually really good. I don't use scary "dipping chocolate sauce", just regular melted chocolate chips.

Despite its name, the compound contains no bromine — theobromine is derived from Theobroma, the name of the genus of the cacao tree, (which itself is made up of the Greek roots theo ("God") and brosi ("food"), meaning "food of the gods")<4> with the suffix -ine given to alkaloids and other basic nitrogen-containing compounds.

17. My husband's boss took them
on a tour of gourmet chocolate shops in Manhattan as a holiday celebration. He brought a couple of bars home--one was chocolate with little bits of bacon. The chocolate was exquisite but I didn't care much for the combo.

32. Gives me an idea: a deep-fried peanut-butter and
banana sandwich, bacon-wrap it, and then use chocolate dipping sauce.

Imagine it:

You take one reasonably firm banana; impale it on kebab skewer. Apply peanut buter as "glue". Encase with very fresh, slightly rolled Wonder Bread. Pan-fry bacon until it is somewhat firm, but still pliable enough to be rolled around the outside of the bread--which then is held in place with toothpicks. Deep-fry that, remove the toothpicks, and serve with chocolate dipping sauce. Nutella would do.

(Now I'm afraid someone might just try that...)

Slight variation - Paula Deen's Lady's brunch burger



Can't wait to see this year's fair foods...of course big fat maple glazed deep fried bacon on a stick will be back. Deep fried butter, stuffed with cream cheese, coated in batter, then deep fried and coated with Red Bull syrup, whipped creme, sprinkles and expresso beans. Covers about everything I am thinking.
