I've recently become lactose intolerant (or perhaps weaned!). Giving up meat was easy but I loved cheese so I'm trying to fill a hole in my diet. Years ago I tried fake cheeses but I found them all gross and super-salty.

11. other: colby jack also known as marble cheese. It is a great all around

cheese for multiple purposes and great on crackers.

I dig the tanginess. I like all kinds of cheese, really.

I've made some simple vinegar cheeses that were tasty. I like using a pear-infused balsamic vinegar. Delicate but yummy!

14. On your list, I had to vote for Extra Sharp Cheddar, but

my absolute favorites are:

Some cheese from the UK that has green onions in it. Ten years ago I could buy it in Los Angeles for five bucks for five ounces, but the last time I saw it, it was twenty five dollars for five ounces. Incredible. Needless to say, I have not bought it in years.

Secondly, there is Gouda. That was my father's favorite cheese, and he had good taste when it came to cheese.

27. It's not cheap, but I have been able to get pretty good deals at Whole Foods and Trader Joe's.

Do you have either of those near your house? I got a rather huge wedge of it for $9.95 at Whole Foods. Can't remember the weight of it, but it was generous.

Extra treat: real English cheddar. From Cheddar would be real nice too, and yes I've been there. the Irish cheddar isn't too bad, and the Canadian's OK.

53. Seriously, goat cheese is some kind of cheese miracle.

If I had to slowly go vegan by eliminating one non-vegan item at a time, I think goat cheese would be the last item I would eliminate. There are plenty of wonderful substitutes for meat, but I haven't tried a soy cheese yet that comes close.

A lovely cheese from Burgundy. The rind is washed with marc de Bourgogne, the lethal local brandy made from wine leftovers and as far as i can tell, lighter fluid. Incredibly luscious and creamy smeared on a slice of a fresh baguette and accompanied with a fine Sauternes. Even though it has a boggling stench of very rank feet, it tastes divine.
