How do you like your burger?
I like mine made of sirloin ground beef topped with ketchup, sharp cheddar cheese, red onion, guacamole and green chile. Of course, the bun must be toasted.

4. Ya know, I made us some wonderful turkey burgers the other night
with Emmenthaler, pickles, vine-ripened tomatoes (outta season and imported, but I couldn't resist), crisphead lettuce, Bell pepper and red onion, with optional mayo, ketchup, Dijon mustard and green chile sauce. They were MUCH better than beef (less greasy) but not nearly as good as the meat/poultry-free burgers I found last summer in our Coop. These were wonderful, but the meat-free burgers were YUM!

And I'm sorry if I've given anyone a heart attack just by reading that.

If you don't know about Dyer's burgers, do some research. GOD, they're so good though.

10. Coarse-ground chuck....
shaped to a patty with as little handling as possible and salted with coarse kosher salt... Grilled over hardwood coals to medium rare with a slice of swiss cheese added a minute before removal.... Onion roll singed over the coals... iceberg lettuce, garden fresh beefsteak tomato, diced red onion, Hellman's mayo. Pickle and potato salad on the side.

How often do I get this burger? VERY seldom.

All seriousness aside, here's a photo I took of the first burger I grilled on my new CharBroil gas grill (July 2008), cooked to a perfect MEDIUM, with cheese, lettuce, tomato, sliced red onion and 1000 Island dressing:

19. Amy's Texas Veggie Burger, two slices of sharp Cheddar, fresh pico de gallo
and Veganaise on a lightly toasted potato-bread bun.

Weird, eh, eating Veganaise but still eating cheese? Can't figure it out myself.

My second favorite is using lettuce and tomato and srirachi sauce instead of pico. Depends on what I've got.

That's one mood.

Another: swiss cheese, jalapeno slices, raw onions, little dollop of mustard.

Always rare, if I can get it - if I'm gonna eat that much meat at once, I'm going to REVEL in the carnivorousness. I want red blood in my slathering jaws.

You ruin beef if you overcook it!!!

Whole Wheat bun. If you are eating a bun it has GOT to be whole wheat. I skip the bun most of the time in recent years. I miss them, but they are not kind to me...

Sometimes they are best with sauteed mushrooms, bacon, and Swiss.

Sometimes I like them with ketchup, relish, Diablo mustard and sauteed onions.

I love beef.
