What's for dinner, DU?
I'm making a soup that I completely made up the recipe for, and hoping I don't screw up. It's spinach and lentils with ginger, garlic, lime, and chili, in a coconut milk/vegetable broth.

And you?

3. black bean soup
I have some free flour tortillas from the food co-op (there was a problem with the packaging machine and the whole batch delivered that day had open packages, so they gave them away instead of tossing them) and a bag of limes I bought really cheap that I need to use.

That sounds interesting...

What led you to that combo?

We're going to have something I haven't made in a while: It's a microwave dish. Filet of sole, covered by mushrooms, celery, some chopped tomato (I think) and various spices. Some onion soup mix too, IIRC...

Put everything into a Pyrex dish, cover almost all over with saran wrap (it doesn't touch the food, a no-no) and microwave for a while...

Very tasty and easy!

Rice and anything else you want to eat with it...

I've never really cooked in the microwave, other than warming stuff up and the like. I may have to try that sometime!

The soup idea was kind of based on Thai Tom Kha soup, which is a coconut milk soup with ginger, lime, and the like. I had a can of lentils and a bag of spinach at home, so I knew I wanted to do something with those. So, it ended up almost being like a Thai/Indian fusion.

And it actually turned out pretty good! Yay!

17. I don't think I can eat anything.
No appetite at all lately for some reason. I try to eat but can't even make it past the first bite. I was hoping this thread would make me hungry and, while it all sounds scrummy, it didn't work. x(

18. 1/3 Spaghetti, 1/3 Fettucine, 1/3 Linguine with leftover homemade Marinara sauce
...I made fresh Marinara sauce 2 days ago (enough for two meals).

I wanted to finish off the little bit of Fettuccine I had in the package, so I added equal amounts of spaghetti and linguine, coming up with the right-sized portion for the sauce.

A little Parmesan on top and it's dinner time!

19. I wanted to give you the recipe for the fish filets...
"Fish Creole"

1 pound fish filets, sole or haddock
1 8 oz can tomato sauce
1 can mushrooms, drained
1/2 bell pepper, sliced
1 stalk celery, sliced diagonally
3 tablespoons water
1 and 1/2 tablespoons instant minced onion
1 teaspoon chicken bouillon granules

Pat dry the fish. Lay in 12 x 8 x 2 microwavable dish, with the thickest pieces on the outside.

Combine all the ingredients except the fish, and stir well. Pour evenly over the fish. Cover tightly with plastic wrap, turning back one corner to allow the steam to vent.

Microwave on High for 8 to 10 minutes, turning 1/2 a turn after 4 minutes. Allow it to stand about 5 minutes to allow the flavors to blend. Will make about 4 servings.
