I call it "a la Midlo," because the veggies were roasted with Barefoot Chardonnay.

She does like pasta, though.

And, tonight's dinner was a way of sneaking vegan food into LostinVA. At least until she put cheese on it.

5. It's good, and organic
The only non-organic ingredient was the wine. Organic wine is too expensive to cook with.

7. This was definitely a proper meal
I roasted zucchini, cherry tomatoes, carrots, shallots, and garlic all together with some barefoot and olive oil, salt & pepper. Then, I toss it in with some pasta and vegetable broth and let it cook together for a couple minutes, then serve.

It's a pretty common meal in our house.

Personally, I prefer red wines, but the Barefoot Chardonnay is pretty good and cheap. It's $5 a bottle, so I really can't complain about the price. Sometimes magnums go on sale for $7 a bottle.

I don't really drink much wine, but when I do, I usually grab barefoot. Unless my mom's buying, she insists I drink organic now, because she's on an organic diet (breast cancer). I can't afford $20 bottles like she can.
