The crust gets too hard, the shitake too mushy and the cheese embalms everything like when aunt Trudy never stopped hugging you on your second birthday.

But, to be fair, sauteed shiitake served with feta and a light sprinkling of grated mozzarella (or parmigiano) with some pesto - now that's a mighty fine dinner. Have a crispy bread as a side dish.

Damn is that good. Whole wheat tortillas make an excellent crust for pizza, regardless of the sauce.

but CMW is half-Italian (his dad's family is from Toscana) and he considers pizza (even homemade) to be "junk food." Also, he's lactose intolerant (when it's convenient -- for example we're having fondue tonight by HIS choice! :rofl:) .
