28. Very simple recipe, in that case
Since that's an Edwards Pie, just go to the supermarket and exchange money for pie.

Mine is better--I call it the Obama Pie because he likes pie, I like Obama and therefore vicariously he likes this pie. Substitute key lime juice for lemon juice in the Argo lemon meringue pie recipe.

45. How you can "get" Key lime pie...
There are three basic ways to make one of these things.

First, the official way:

four pasteurized egg yolks
one can Eagle milk

Mix together, then add a quarter cup of Key lime juice and taste the pudding. If you can't taste the lime juice, add a little more, stir well and taste again. Keep doing this until (1) it's tart enough or (2) you put 1/2 cup lime juice in it. Dump into a graham cracker crust and bake for 15 minutes.

Next is the "alternate" way--go buy a Jello Cheesecake mix and add Key lime juice to it. Since Jello cheesecake mix is no-bake, this is what I'll probably have to do when I'm in school in a few weeks because they don't let you keep heat-producing appliances in the barracks.

The way I recommend:
step 1: mix 1/3 cup cornstarch, 1-1/3 cups sugar and 1-1/2 cups water. Dump the shit in a saucepan and put it on medium heat. Stir the fuck out of it until it boils and gets thick. It will also be clear. When you're staring at a pan full of disgusting-looking gelatinous glop, it's ready to come off the fire.

step 2: Separate four eggs. Stir the yolks really, really hard and start adding a little bit of the glop to it--basically, if you can get about as much glop into the yolks as there is yolk, do that. What you are attempting to do is to prevent having chunks of cooked egg in the middle of the pie. That would be bad. Once you have a good glop-yolk blend, stir it into the rest of the glop. Put the glop back on the fire and cook it for a minute--this so the eggs are completely cooked and won't give you a strange disease.

step 3: Take the glop back off the fire and throw in a quarter-cup of Key lime juice plus three tablespoons of butter. Taste it, and if it's not lime-y enough for you, put in a little more juice--once again, until you're up to no more than a half-cup. If you don't like tart foods, you'll probably be at 3/8 cup in any of those three ways.

step 4: put it in a pie crust. You can use any pie crust you like--graham cracker, rolled, vanilla wafers, anything.

step 5: if you want meringue, you need the egg whites, 1/8 tablespoon cream of tartar, two to four tablespoons of sugar depending on how fluffy you want this shit to be, and a KitchenAid stand mixer with the wire whisk beater on it. Dump the egg whites and the cream of tartar into the bowl then turn the mixer to eleven. Every ninety seconds or so, throw in a teaspoonful of sugar. You can't overbeat this. Once you get all the sugar in, beat it until you get bored. Turn the mixer off, remove the beater and whack it against the side of the bowl to make the meringue that's stuck in the beater cage fall out. Then use your rubber scraper to scrape all the meringue out of the bowl onto the pie. Set your oven to 350 and, after making sure the oven's hot and the meringue is sealed to the edges of the crust, put the pie in and bake until the meringue is golden brown--12 to 15 minutes.

Serves one.

39. Once went on a quest
for the best key lime pie in Florida. My sister and I sampled a dozen or more. The winner? Blue Heaven in Key West and second place, Louie's Back Yard. (I make a good one, too. Recipe right off the Nellie and Joe's bottle, but I use fresh juice when they're in season. It's a pain to squeeze 'em, but you don't need that much.)Does anyone else know that you actually don't have to bake the mixture, although I do - the lime juice cooks the eggs.
