I am going to a pot luck on Saturday. Any helpful recipes?

1. I remember an early 80's report on a punk rock catering service. Some of the offerings...

- Baby doll heads in jello
- Fried chicken tied to a stick (to be eaten without removing it)
- Beef stew in a kitchen sink
- guacamole on a mannequin head

The others were equally weird/disgusting.

Anyway, If you can find them, they make two-bite sandwich buns in blocks of 12/18/24. They make life easy. They're usually pre-split so you can peel off the top layer (still all attached). Put mayo on both sides, a little brown mustard on one side (go light), and then put sliced swiss cheese over the bottom buns, put a mushroom slice on each section, use full lettuce leaves (romaine or something, not iceburg), and put on the top. Run a sharp knife down the perforations to cut the cheese and lettuce and then pack in a square/rectangular covered tub. They hardly take any time and are good for anyone who at least eats egg and dairy (mayo has egg).

I've also had good luck with vegetarian sushi, but that takes a SHITLOAD more work. The finger sandwiches are quick, cheap, and easy.

2. Make a lasagna with mozza, cheddar and havarti cheese. Roast veggies like zuchinni, peppers

and portabello mushrooms. Add meat layer. Put tarragon on each cheese layer.

3. Hashbrown casserole

This is always a hit in my family. (Since we're vegetarians, we substitute cream of mushroom soup for the cream of chicken.)

one 2-pound bag Ore-Ida frozen hash browns (Southern Style), thawed
1 onion, chopped
2 sticks of butter
1 can cream of chicken soup
8 oz. carton sour cream
1 8 oz. pkg. shredded cheddar cheese
2 cups of crushed corn flakes

Method
Preheat oven to 375. In a 9x13-inch baking dish, place the thawed hash browns. In a saucepan saute onion in 1 stick of the butter. Stir in soup, sour cream, and cheese. Cook and stir until smooth. Pour mixture over hash browns. Then cover evenly with corn flakes. Melt remaining stick of butter, then pour evenly over corn flakes. Bake for 40-45 minutes, or until heated through.

Number of Servings: 8 to 10

I shouldn't have copied a recipe off the internets without modifying it before putting it here.

I don't use two sticks of butter. I don't put butter into the sauce, and I use just a dab of butter (actually a light margarine) to moisten the topping.

Otherwise yep, de-clogging would be necessary. :-D

corn bread - you can make a big double, triple or even quadruple recipe in a hugh cake pan. Add sharp cheddar, some sauteed onions and green chilis or jalepenos. :9

6. Crustless Spinach Quiche w/3 Cheeses

My favorite group feast bring-along.
Simple but elegant.
Looks like hell going INTO the oven -- a BEAUTIFUL green/golden color coming out.
I use lowfat cheeses -- can't tell.

6-8 eggs, beaten
10 oz pkg frozen chopped spinach, thawed & squeezed
1 lb container cottage cheese
8 oz block cream cheese, in small cubes
6 oz (or so) Swiss cheese, in small cubes/1" squares

Grease 9x13 baking dish (so beautiful, I always use glass).
Mix all ingredients together well in a large bowl.
Pour into baking dish.
Bake, uncovered, 400 degrees for 45 minutes (or so -- dont let it go beyond golden brown)

Those are my usual standard potluck dishes, and believe it or not, I never come home with an empty dish ha :)

10. Cabbage Roll Casserole

A winner ...only add more salt and pepper plus 2 garlic cloves, (chopped up) as well as some and cut up Kilbasa. Make a day ahead as it gets better with sitting. Yum...you'll get lots of requests for the recipe and it's EASY :)

11. Porcupine meatballs

Always a hit when I take them to potlucks:

1 lb ground beef
1 egg
1/3 cup of rice
1 chopped medium onion
can of tomato soup

Preheat the oven to 375 degrees. Mix meat, egg, onion, and rice together well, form into balls and put in a casserole dish coated in cooking spray. Combine soup with one can of water, heat to a boil and pour over the meatballs. Bake covered for an hour and 15 minutes, then uncovered for 15 minutes.

Or this spinach pie:

Ready to bake piecrust
1 box of frozen spinach, thawed and drained
1 lb ricotta cheese
1/2 lb feta cheese
Two medium chopped onions
Three eggs

Beat eggs together then mix with the rest of the ingredients. Pour into the piecrust and bake at 350 until done; usually 45 minutes to an hour (fork should come out clean in the middle). Cover the crust edges after ten minutes so they don't get too brown.
