This is only the second time I have roasted Hatch chilies. What should I do next?

2. If it's not to late, skin them while they're warm!

It's much easier to do while their warm. After they've been skinned, I let 'em cool, layer them on sheets of wax paper & freeze them in ziplock bags. Then I can thaw & use whatever I need when I need 'em.

I'm getting a quarter bushel next weekend and will freeze about 1/3 and use the rest to make a whole lotta green chile with tomatillos, potato & roasted pork shoulder. I can usually make enough to last me through half the winter.
