1. Interesting flavor

I find them to taste a good bit like and orange and a peach combined. If you mix orange and peach flavored Jell-o, you get a pretty good approximation of a persimmon's taste.

2. If a persimmon is squishy, freeze it-

when it starts to thaw, it's kind of like sorbet.
Or, you can make cookies with them.
