What should I do with all my extra Canned Pumpkin?
Any ideas? I have 3/4 of a big can.

My husband made some incredibly yummy pumpkin muffins that he topped with a bit of dolce de leche. OMG! They are incredibly good!

5. add it to soup.
Stir it in vegetable soup or turkey soup, etc. Pumpkin makes soups hearty (like potatoes) without adding calories.

Pumpkins are vegetables. (They're a squash to be precise, so are gourds.) It came in a can. Ergo, it's a canned vegetable.

Dish it into a sauce pan, heat it up, dish it into a bowl and eat it. Alternately, put into a ceramic baking dish and bake it. It's no stranger than candied mashed sweet potatoes or any other seasonal squash recipe.

14. Mmmmm, pumpkin cheesecake.
Basically, you take your favorite cheesecake recipe, add a bit more sugar, nutmeg and cinnamon and throw in the pumpkin puree. Canned sweet potatoes also make a good substitution for the pumpkin. The end result is a heavenly mix of pumpkin pie and cheesecake.

16. You DO NOT have to limit pumpkin pie making/eating to Thanksgiving alone -
I make them for much of the winter, just to spread a little cheer in the dull, cold days...also have 2 whole turkeys in my freezer for late in the winter...

17. Add some canned plums and you have plumb sauce. (Seriously, there is alway pumpkin in
plumb sauce.) I don't know where you'd get plumb sauce....perhaps at a chinese market?
