1. Well, this works for me:

Toast an English muffin until medium browned and crisped. Spread it with about 1-2 tablespoons of Ajvar, which is a Balkans style vegetable spread made of roasted peppers, onions, tomatoes, etc. -- kind of like pizza sauce but not quite, since the dominant flavor is sweet peppers, not tomato. Then, a little parm on top, and into the microwave long enough to heat the sauce and melt the cheese. A quick, tasty little mini pizza snack.
