Imagine: Your daughter has just come to you and said, "I'm getting married in six weeks, tens of thousands of my friends are coming, and oh, by the way, half of them are vegetarian and the rest eat only organic. And you'll write the checks, won't you?" What do you do?
If you're Larry DiPasquale, president of Epicurean Catering, you start filling mini-chile rellenos. Fifty-five thousand of them, to be exact.
In its 26 years in business, Epicurean Catering has dealt with plenty of uptight clients, and has even fed world leaders and politicians (including Bill and Hillary Clinton) at the 1997 Summit of the Eight. So he's unfazed by the idea of serving 15,000 members of the media at a marquee event, plus filling the plates at 60 to 70 other Democratic National Convention parties planned for the last week in August.
His crew of 45 chefs is already operating at full tilt.
If Katie Couric attends the grand media party at Elitch Gardens on Aug. 23, one of the many events DiPasquale will oversee, she will choose from a cornucopia of Colorado foods: petite chile rellenos, Haystack Mountain goat cheese tartlets, buffalo lollipops with chipotle barbecue sauce, mustard-crusted lamb chops and Coleman strip loin with sauteed mushroom and caramelized onions. The regular Elitch concessions will be serving food free of charge, as well, so reporters can gorge on corn dogs and cotton candy.
At the new Ritz-Carlton — which is entirely booked with Dems, though no word yet on which ones — meetings will feature Haystack Mountain cheeses, local microbrews Great Divide and Fat Tire, and breads from Breadworks in Boulder. (The Elway's kitchen takes care of room-service orders.)
