Gov. Arnold Schwarzenegger signed a bill Wednesday that will prohibit force-feeding ducks, geese and other birds to produce foie gras in California.
But the ban won't take effect until 2012, allowing producers seven years to find another way to fatten the birds' livers for the gourmet delicacy.
Guillermo Gonzalez of Sonoma is one of two foie gras producers in the United States. He said the delay will allow him "to demonstrate that foie gras production is safe and proper."
The force-feeding issue caught state lawmakers' attention after animal rights activists vandalized Sonoma Saveurs, a restaurant opened by Gonzalez and two partners that specializes in foie gras. Activists also broke into Sonoma Foie Gras, the Central Valley farm where Gonzalez raises ducks.
