Anyone have a favorite vegan pureed soup recipe to share?

Anyone have a favorite vegan pureed soup recipe to share?
My fiance has to have some extensive oral surgery soon and I'm collecting pureed soup recipes. Tonight I made a nice fennel/leek/potato one and over the weekend I tried a garlicky spinach soup with a potato base. I know it's a little early to start thinking of soups, but looks like someone will be living on smoothies and soups for a while.

1. If she likes
cold soup how about a gazpacho style soup?

9 oz blanched almonds
a little over 1 pint iced water
3 oz stale white bread (no crust)
3 crushed garlic cloves with a little salt
3 tablespoons olive oil
3 tablespoons white wine vinegar

soak bread in some water
finely grind almonds in processor then add 5 tbs water
process again
squeeze out bread and process with almonds and add the garlic
add oil
then the water gradually
season with salt pepper and vinegar to taste
chill and serve.

That sounds really good. My mom's recipe for gazpacho is a little different than this, so I think I'll give this one a try. So far I only have hot soups and no cold ones, so this will be a nice change of pace for him. Thanks so much, I really appreciate it and I'll let you know what he thinks.

We still don't have a date set for the surgery (awaiting CT scan results) but hopefully it will be the end of this week or the beginning of the next. Thanks again. :)

3. No problem
If you can get hold of a middle eastern recipe book you'll find lots of good soups (substitute the meat stocks for a veggie one obv.) but they are packed with flavor and chunky vegetables can be pureed after cooking.

Hope all goes well with the surgery. :)

4. Split pea soup
2 cups dried split peas
1 small onion chopped
2 cloves garlic minced
1 cup sliced carrots
3 stalks celery chopped
5 cups water
5 slices of vegan bacon
2 T olive oil
salt to taste

heat oil in large stew pot
add onion, celery and garlic
when onions are nearly translucent
add veggie bacon and cook until veggies are all tender
add water, peas, and salt to the stew pot.
cook (simmer) about 45 minutes, stirring occasionally or until peas are done, if soup is too thick add another cup of water
place in blender and serve.

Thanks for that recipe and the good wishes! We hope to get the CT scan results tomorrow (we've been waiting for a week now and it's been driving us somewhat batty...). :)

10. Oops
I made in error in the amount of water for the amount of dry split peas. Either double the amount of water or cut back the peas by 1 cup. I hope all is well at your house.

11. Thanks for the fix!
Surgery is scheduled for Friday and I think I'm going to make this (just picked up some Smart Bacon, in fact - yum!) Thanks also for the well wishes, actually got some good news from the surgeon today, so it's not quite as dire as we'd feared and we can relax a bit. :)

Corn Chowder (you could puree more than usual)

No recipes, I just wing it on these.

7. Those sound really good
I bet the ginger in the carrot soup would help settle his stomach while he's on the painkillers. Thanks for the tips. And I tend to kind of wing it when I cook, especially when I make soups.

8. Goya 16 Bean Soup Mix


I love to start with that...i roast some veggies in the bottom of a pot. Whatever is fresh (celery, carrots onion, broccoli, tomatoes). I add a vegetable broth and just cook for a few hours. Almost everything breaks up and its delicious. I also have a hand mixer with a blade that i use to smooth it out sometimes. you could also add more veggies and hour or so into it, but those don't break up as much.

9. I've seen that in stores, I'll have to try it
I just recently got an immersion blender and have no idea how in the hell I lived without it for so long or why, considering it was only $25 or so. Yum, that looks delicious. Thanks. :)
