To all NOT having guacamole on sourdough baguette this morning
I PITY YOU! Sometimes cobbling together leftovers results in an unexpected masterpiece. Guacamole and tomatoes on sourdough, the new McKatie McBreakfast thingee!

Happy Monday to the veggie contingent at DU!

1. Yum
All I had was a bowl of instant grits!

I did have a nice portabello mushroom burrito left over from this weekend for lunch.

Happy Monday all!!:hippie:

2. Leftovers for breakfast is the best.
I had ziti with soysage-tomato-basil sauce and 2 cups of coffee.

Leftovers...it's what for breakfast.:P

P.S. As good as soysage pasta was at 5am; guac, tomato and sourdough sounds better.

6. Yum. That's better than what I had.
So-so homefries and assorted raw veggies.

5. I warmed up some whole wheat flatbread and smeared it with
some locally made apple butter and peanut butter. It was awesome.

7. I've often done that.
Guacamole must be eaten quickly, so if there are any leftovers I always have it on toast of some kind the next morning. :)

8. Oatmeal with dried cranberries and some Rice Dream on top
and that seems bland compared to what you all had. :-)

9. Leftover guacamole?

That doesn't exist at my house. Once it is made (or opened) it is GONE!!!

11. LOL, I HID SOME....
That is so funny -- I literally hid some in a little tupperware thingee so I could have some for lunch although it didn't even make it to 9:00!

12. My schedule is weird so I don't have "breakfast" per-se
I did have a bowl of All-Bran with wheat germ and oat-milk yesterday evening when I got up. I suppose that qualifies as breakfast.

Here at work I've had some cold pesto-pasta with nutritional yeast and a banana (the banana was seperate of course). I've got a bagel and an apple for later.

13. Me neither...
I tend to cook one large meal and eat until it is gone, regardless of time.

14. Cold cereal with soymilk, toast with strawberry allfruit,
chocolate silk (I love chocolate soy milk), orange juice, and earl grey.

Yours was better.

15. I just bought two very ready avocados
this evening. I may have some guacamole tomorrow if I don't have to travel.

Avocados make the best travel meal, ever. Easy to carry, kind of sturdy. I can't say the same about the tomato.

16. I just stopped by & the title of this thread has my stomach rumbling.
Time to walk, but I will take a few bucks & stop by the local bagel/sandwich shop. They have fresh bagels & pretty decent guac! ;)

Happy Friday!!
