I had a vague idea for some kind of stew. I picked up potatoes, squash, leeks. I have onions on hand, and quinoa. I forgot some veg broth, but I can go get it, as well as some lentils or other legumes. Maybe some eggplant. Need some protein.

Anything? Thanks

1. sounds like you already have your veg broth on hand!
To make a creamier texture as you simmer your veggies, you may want to take a portion of your beans (lentils or other beans) and pre-cook them either with a pressure cooker because that is quicker, and mash the beans and then add to your veggie stew. Carrots are always a great addition to any stew. Most broth packets I have seen primarily contain a high sodium content which I try to avoid. For my particular flavor enhancement I always revert to the staple Mediterranean simmer of: olive oil, chopped garlic, onions and tomatoes. and throw that in as a base for anything I cook.

How's it going? Hope you are well.

You do something like http://lowfatcooking.about.com/od/vegetablesandvegetarian/r/beanvegstew.htm#">this and just adjust the ingredients to what you have. If I were making it, I'd probably go lighter on the carrots and add more mushrooms and maybe some corn. (Or maybe make the basic vegetables into a mirepoix to make it stewier.)

I'd skip the eggplant in this one--it might make it bitter. Good luck!
