1. I like Recipes from an Ecological Kitchen
by Lorna J. Sass. It's kind of old--1992--so it might be hard to find.

And this is a vegetarian cookbook, not vegan, but most of the recipes are vegan: Lean Bean Cuisine by Jay Solomon. That one's readily available.

I ordered Ecological Kitchen used from an amazon seller. It was in great condition. Looks almost new. I looked through some of the recipes and they look great. Can hardly wait to try some of them. Thank you for recommending it!

5. The Soy of Cooking, vols. 1 and 2
I love these books and would highly recommend them to anyone who wants to go vegan (I'm not quite there yet :P ), and would like more ways to serve tofu. I cannot remember who wrote them, but if you search Amazon you'll find them. That's where I bought my copies. Bon appatit!

6. I use the Vegetarian Epicure, Vols. I and II
there are lots of recipes in these two books that are vegan or can easily be converted to vegan.

Every time I am looking for a new/good recipe I look here or, better yet, the 1976 version of "Joy of Cooking" - lots of easy to manipulate recipes in this fine cookbook too! Note: Stay away from any other issues of this cookbook. Sadly, newer issues aren't even close to this one. :)
