My daughter has decided to stop eating meat...
I made the switch myself a couple of months ago...and even thought the rest of my family still were eating meat, they didn't complain (too much) or balk at the vegetarian dishes I put out several times during the week. EVERY night I've made sure there were vegetarian dishes available (for me obviously). My oldest daughter has been eating the vegetarian dishes more and more and finally, two weeks ago announced that she was giving up meat altogether. She's been scouring the internet looking for interesting new recipes for us to try together. It gets even better...the other night we had these AWESOME black bean enchiladas. I made a pan of beef enchiladas for the other three and a pan of the vegetarian ones (planning on having leftovers) for my daughter and myself, and the entire family ate the whole pan of the vegetarian ones, and have requested that those are the only ones I make from now on!

1. That is awesome. Good for both of you.
You're a good influence. And it sounds like a parent/child bonding opportunity too. :)

2. So far it has been.

4. I'm doing the best I can!
I gotta'admit though..I still have some pretty strong "cravings" (if that's the right word) for meat sometimes. I'm still on eggs and dairy and that helps. The more good recipes my daughter and I find the more open the rest of the family seems to be about eating veggie. Óver the last year or so I've tried to serve vegetarian meals at least twice a week and they don't usually complain. I have to tell you though..I'm getting a real thrill being sneaky about slipping in meat substitutes whenever I can. Sometimes they catch it, sometimes they don't. Ah well..you win some, you lose some.

6. Harr!! Funny about the black bean enchiladas!
Veggie selections are frequently the first to go at parties, buffets, etc.

Congrats to you & your daughter. I went veg two decades ago & have never looked back. We went vegan about 7 years ago.

Here is a great recipe site: http://vegweb.com/index.php?action=recipes

And, at the top of this forum we've pinned a recipe thread. Lots of good eatin' in that thread!!
