i need help ordering vegan sandwiches to a caterer - that a vegan would ENJOY

I have to set up lots of meetings and standard fare is sandwiches, salad, chips and cookies.

I've just gotten another attorney to serve, call him RQ, and he is vegan.

I told the caterer to prepare a vegan sandwich for him for yesterday's meeting. RQ couldn't even find his sandwich. He had salad and chips (vegetable oil) for lunch.

What kind of sandwich can I tell the caterer to prepare? What's good? I can't rely on a caterer to have veg or bean burgers.

Help...?

3. Try asking the attorney directly...

what he likes -- I think he would appreciate that you are trying to accomodate his diet choice, and I'm sure he can give you several options for sandwich choices that you can use in the future.

5. I'm shocked they couldn't come up with something.

Then again, if they're that clueless the bread probably isn't vegan anyhow. If they're willing to give it the old college try, anything from a big pile of produce to hummus to marinated tofu to fake egg salad would do. (It's for kids, but the vegan lunch box blog has a ton of ideas for creative sandwiches and other lunch goodies. And there's always vegweb, which has more free vegan recipes than you can shake a carrot stick at.) If they were feeling wildly uncreative they could grab some mock meat and veganaise and make him a vegan version of whatever everybody else was having. But not even trying, that's kind of a bad sign.

7. Hummus is probably the easiest.

Any idiot caterer should be able to handle hummus, lettuce, tomato and onion. :)
