We finally made yummy homemade seitan yesterday.
We used this recipe, which calls for baking it:

Even after the hour+ of baking, it was still a little gummy in the middle, so we cooked it at 325 a little longer.

After the disaster that was this:

we were reluctant to give it a try again. But hey, what better day than Black Friday to stay home and turn off the computer (that was nice...), and undertake a kitchen project. The results were good. The gravy was amazing!

We want to try some other seitan recipes now, like Isa's and also the Seitan-O-Greatness, which looks yummy:

1. Lower oven temps rule!
Ok, so it's slower. Maybe we all need to slow down a bit, anyway.

A slower oven means less attention to the process, less chance to mess up the item being cooked.

Relax. Have a drink -- water, tea, beer, it doesn't matter. Don't fret that your oven isn't at 350° or higher. Set your oven lower & know that you give your guests more attention than your food. Your party will still be wonderful
