I've found two things in "Veganomicon" that I don't like. The first is the pumpkin baked ziti, which is likely because of the two cups of bread crumbs and the fact that - try as I might - I just don't care for gourds. The second is the "Simple" seitan.
I made seitan for the first time two weeks ago using one of Isa's recipes (which I thought was in Veganomicon) and it was delicious. However, when I tried to replicate it last night, I got a spongy mass of beige blandness. So I decided to try it again and noticed that it seemed like it was missing ingredients. Then I checked "Vegan with a Vengeance" and realized my mistake was that the two recipes are quite different, and that my successful batch was from "Vegan with a Vengeance" and not "Veganomicon."
Stick with the "Vengeance" recipe.
