Recommendations for a vegan parmesan substitute?
Edited on Thu Jun-25-09 02:19 AM by Codeine
We're doing some menu planning for a gathering in a few weeks and I've been asked to come up with a good vegan parmesan. The only one I've tried was Galaxy brand, a complete and unmitigated disaster:

so I'm hoping you lot can point me toward something a bit less repulsive. ;)

Thanks! :hi:

1. I've used the following two products. They're pretty good.
http://www.veganessentials.com/catalog/parma-raw-parmesan-cheese-alternative.htm

Ingredients: Raw organic walnuts, nutritional yeast, Celtic sea salt

Ingredients: Blanched almond meal, sea salt, nutritional yeast, dehydrated onion, citric acid

These are kind of pricy options for what is essentially nutritional yeast & ground nuts, so I decided to make my own vegan parm. I toast pecans in a slow oven. (Toasting brings out the flavor.) Then I toss the pecans in the food processor along with nutritional yeast flakes, some garlic & onion granules & a little bit of salt. Process until it's finely ground. Store in a glass container in the fridge. I use equal amounts of nuts to NY flakes. Also, I've made this with walnuts, almonds or cashews. All were good, although the cashews impart a slightly sweet flavor you might not want in a parm replacement.

Good luck!

2. What are you using it for?
If you're trying to substitute it for a main, essential ingredient, just give up now. I'm sad to say that a good, salty, stinky, melty Parmesan substitute that is vegan does not exist right now.

If you just want something to sprinkle lightly on your pasta, Parma is much, much tastier than the Galaxy stuff. It still doesn't taste/melt much like real Parmesan cheese, but that doesn't stop it from being damn tasty!

Hope that helps. :)
