One year!
I remember last July 4th. We had a couple of friends over. My husband cooked steaks out on the grill. I had not eaten red meat in years and years and was not eating it that night either. I had been thinking for years about just going ahead and becoming a vegetarian but never really got there until I looked at those bloody steaks that night. Last year, on the 4th, I decided it was time. I think I might have eaten chicken the next day or the day after but that was it. I have not looked back. I do not miss meat at all. This was the easiest transition I have ever made and I am so happy that I finally did it. I wish I had done it years before this. I guess better late than never :).

Thanks for all the encouragement, the stories the recipes and many discussions that I have been able to read to gain information. Tomorrow on the 5th I am starting a soy based diet to balance better my protein and carbs. I will be closer to the farm so to speak. Now if I could just learn to like Stevia I would be set!

and AFAIK I don't think anybody really likes the taste of Stevia. It's more something to put up with to get a low-cal sweetener option that isn't going to give you cancer or embalm your liver.

Well that explains a lot! It does not even taste sweet to me but I have an enormous sweet tooth. I have stopped with all sweet stuff most of the time but I do need to sweeten my tea.

It has been an amazing thing to experience the change in my palate. Things I thought were funny tasting are now very tasty and the things I loved already are a hundred times better. Perhaps it is just what it is really like to be healthy? LOL, whooda thunk it?

Now, on to lose the excess carb weight I have put on.

Thanks. It is the most worthwhile change I have ever made.

5. I feel great!
I am feeling no dead animal guilt. My complexion is better. My mind clearer. My weight is up and I am not happy about that but I started the "Soy Based Diet" this morning and it will come off and I will feel better being in the Zone too. My energy level is up a little but then I have been going through a huge personal crisis for the last 9 months and not losing too much energy or suffering too much depression. I don't know how to chalk that all up to my diet change but am willing to give it most of the credit, especially given the circumstances cause I am not getting any younger :).

In another year I should be in great shape.

All in all there was not a better decision I could have made.
