Hey Vegans/Vegetarians -- help me out with breakfast, please.

Hey Vegans/Vegetarians -- help me out with breakfast, please.
In the past, this is what I was used to for breakfast: a bowl of cereal (usually Cheerios) with milk, accompanied by an English muffin with butter and fruit spread.

Lately, I have been enjoying a bowl Barbara's Shredded Spoonfuls with coconut milk, along with some organic blackberries or blueberries.

The problem is, something seems to be missing. I really miss that bread! So I'm wondering, should I just "get used to it," or is there something I can use as a substitute?

Oh, and when I said butter, I really meant a spread such as Benecol.

1. Earth Balance Whipped Buttery Spread
...is the best. Completely undetectable as vegan, and spreadable. The regular Earth Balance Spread (unwhipped) is not as spreadable, so make sure to get the whipped kind.

2. And I can get it at MOMS, too. I was just there the other day.
According to the vegan forum, Thomas' English muffins is about the only brand that is not vegan (that is the brand my husband always insisted upon). One poster points out that Dunkin Donuts bagels contain L-cysteine, that can come from . . . human hair?? Yuck! :puke:

The urban vegan has a recipe for homemade English muffins that looks good, though.

3. Second vote for the Earth Balance
and yes, the whipped is much easier to spread.

As for the bread/English muffins, check out your supermarket bakery. I'm always shocked to find out how much stuff there is vegan. Egg wash is usually the one odd ingredient I find myself stymied by. If you have no luck there, try the local health food store and their freezer section. May very well have some Food for Life Baking Co muffins and bread.

5. EB spread is great. Also try hummus!
I've started to love replacing butter/spread with hummus on almost all of my breads, toasts, bagels, etc. If the hummus at your local store is too garlicky for the morning, make your own! Substitute half (or all, even) of the chick peas for cannellini (Italian white kidney beans) for a creamier, smoother taste.

6. I ate hummus this morning,
Trader Joe's White Bean Hummus on pita. A decidedly odd - but very tasty - way to start the day.

12. I picked up some hummus from MOMS
It was great, but then realized I could make my own just as easily! I just don't think of hummus as "breakfasty" though. But for snack time? Yumm . . .

7. No need to change much.
English Muffins are normally vegan, and vegan margarines/spreads can be found at any major grocery. I like them with Nucoa margarine (not the healthiest, but tasty) and a lingonberry jam that I buy at IKEA of all places.

Those Shredded Spoonfulls are fantastic, aren't they?

went to Safeway, I couldn't even find a store brand of English muffins; all they had was Thomas'. I guess I will have to pick up the muffins elsewhere.

8. I often make my own bread. I have a bread maker, so it's not a lot of work.
The recipes I have, which came with the machine, don't call for eggs. Just milk--and I substitute soy milk.

Makes the house smell great!

9. Fantastic Foods Tofu Scrambler.

Just add one package extra-firm tofu. Cooks up in about 3 minutes and makes LOTS so you get several days worth of breakfast from one packet(2 packets per box.) Adding leftover cooked veggies makes it extra tasty. Yum.

10. I like to serve my tofu scramble on a piece of toast spread with vegan cream cheese.
It adds a little more 'omph' to the meal & doesn't take away from the great taste of the scramble.
