Holy Trinity Mac & Cheese

I must make it.

Since my local HFS doesn't sell any of the cheezes called for, I'm going to have to order from Pangea. Since I'm going to be paying extra for the cold pack, what other goodies do you recommend? What are your fave vegan cheezes & what do you make with them?

Also, my husband used to love blue cheese. Has anyone tried the blue cheese flavored Sheese?

My local HFS only has the Follow Your Heart stuff & it's really not all that great, IMO.
