I grew some beets from seed this summer and I'm really impressed with them. I picked out a carnival color blend and have a variety of red and white beets so far.
I'm not a 'beet' lover. However, I was quite surprised by how tasty the beets were. I cleaned them up, covered them olive oil and roasted them in the oven for an hour. After that I wasn't sure what to do with them, so I peeled and cut them up and added them to my ever-so-amazing vegan meatloaf, which I then stuffed into a homegrown squash and then baked it for an hour. The red beets did turn the meatloaf pink, but that mostly faded as it cooked. Overall, not a bad go at it.
From what I've read, they are also very good for you, if you can figure out what to do with them that is. Also, I've heard that the greens can be used in homemade herbal remedies... worth checking out if you garden.
