My annual foray into the world of the carnivore has come and gone.
A huge part of my Christmas tradition is fixing my momma's NC bbq. My goal for 2010 is to find a meat substitute that works with the hot pepper vinegar sauce because I feel like a big ole lump of I don't know what after eating meat until the end of the leftovers. Any ideas?

I can't do this next year.

Really...I know, it seems odd and not quite workable but it does work...just be aware that it is going to work the inverse of the BBQ and get tougher, not tenderer, as it slow-cooks. You really only need add it to your pit for about the last 45 minutes, at most...you might do better to add it already-warm just after sauce-application for closer to 15-20.
